There are two fermentations one in cherry and one in pulped grain, during the pulped grain fermentation , we inoculate a mocroorganism, Saccharomyces cerevisiae, var diastaticus.It seeks to increase or stregthen the sensory of this variety. Those sweet notes of peach, papaya, or mango in some cases it is what we are looking for, and it’t what microorganism helps us to develop.
