MACA Colombian Variety process P01 is to understand what double fermentation means. There are two fermentations one in cherry and one in pulped grain, during the pulped grain fermentation , we inoculate a mocroorganism, Saccharomyces cerevisiae, var diastaticus.It seeks to increase or stregthen the sensory of this variety. Those sweet notes of peach, papaya, or mango in some cases it is what we are looking for, and it’t what microorganism helps us to develop. This coffee has notes of peach, sweet, vanilla and orange with a process of doble Anaerobic Fermentation with yeast and termal shock. Cupping profile 86.75

For a French press, we recommend a coarse grind; for espresso, a fine grind; and for filter methods like pour-over, a medium grind. This ensures optimal extraction and flavor for each brewing style.
